Summer Bounty - Gazpacho!

One of the many wonderful things to enjoy in July is summer's bounty.  Vegetables are at their peak and the tastes are delicious. I'll admit that I'm not a tomato lover but I do love growing them!  I feel that the perfect way to enjoy my summer bounty is by making gazpacho.  Smooth or chunky, this cold soup is a great way to drink your veggies and enjoy the fruits of your hard work.

The Best of the Best

We all know to maintain a healthy lifestyle we need to eat more fruits, vegetables and grains.  But which ones are the healthiest, the best of the best?  Nutrition Action Health Letter has compiled a factbook that calculates a score for many foods by adding up its percentage of the recommended daily intake for five nutrients plus fiber and carotenoids. These scores can help you choose superstars at every meal!  Top fruits include guava, watermelon, kiwi, papaya and grapefruit; vegetables include kale, spinach, collard greens and Swiss chard; best beans are soybeans, pinto beans, chickpeas and lentils and top grains are quinoa, amaranth, buckwheat, bulgur and barley.
